Use of Concession Stand

Home of the LancersPrior to any food or concession sale, an application for a "Temporary Food License" must be completed fully by the sponsoring group and returned Athletic Department at Livingston High School at least 2 weeks prior of your event for approval.

The following items have been approved to sell at our concession stand at Livingston High School however if a group decides to sell any of these items, strict adherence to the indicated guidelines must be followed.  Any deviation from these guidelines will result in revocation of privilege to sell concessions at our events.

If a group wishes to sell items not listed on this approved menu, approval must be requested and given by the athletic office at Livingston High School prior to the event and again, if any item is sold that is not approved, revocation of privilege to sell concessions will be the result.

At all times an individual with current food handlers certification must be present during the sale.  Additionally, one person must be designated to handle the money and they are not to handle the food.  Food handlers must also wear single serve gloves.

  • All prepackaged snacks are permitted to be sold.  This includes potato chips, pretzels, nuts, popcorn, nachos, candy, granola bars, cookies, cakes or other pre-packaged items. 
  • Soft Pretzels….frozen soft pretzels that are baked in our oven in the concession stand and then kept warm in our pretzel/food warmer or soft pretzels that are delivered / picked up warm from Philadelphia Pretzel Factory or another local establishment and kept warm in our warmer are allowed to be sold. 
  • Hot Dogs……must be frozen and then cooked (boiled at a temperature of at least 165 degrees, in our concession stand and kept warm in our food warmer maintaining a temperature of 140 degrees or cooking the frozen hot dogs on a roller cooker, maintaining that temperature is permissible. 
  • Bagels/Muffins/Doughnuts………can be purchased at a local bagel or doughnut shop and covered with a baggie or Saran wrap.  Cream cheese and butter must be prepackaged and kept on a bed of ice to maintain temperature.  If larger containers are used as an option, they too must be kept cool and disposed of at the conclusion of the event.  No home baked goods are allowed. 
  • Pizza………pizza may be purchased at a Livingston establishment and sold however all pizza must be kept in our food warmer until sold.  Frozen pizza also may be purchased however it must be baked in our ovens in the concession stand and be kept warm in our food warmer until sold. 
  • Meat Ball Sandwiches………these may be sold however these guidelines must be followed.  Meatballs must be purchased pre-made and frozen.  Frozen meatballs must be cooked thoroughly in our concession stand at LHS using purchased jar sauce.  Once cooked, the meatballs should be placed in aluminum pans and covered with aluminum foil.  Cooked meatballs can be placed on racks with sterno keeping the temperature constant at least 140 degrees.  Again, unsold meatballs should be covered at all times with aluminum foil. 
  • Sandwiches/Wraps…………..these can be sold and purchased locally in Livingston. The packaged sandwiches must remain in their original packaging and kept cool on either a bed of ice or in an ice chest.  If the group wishes to make their own sandwiches they can do so in the concession stand however they too must be kept cool, as described above, and packaged in a baggie or covered with Saran wrap. It is recommended that the sandwiches be made in our concession and kept cool in our refriedgerator, until needed. 
  • Noodles/Soups…………these pre-packed items can be sold however only the ones that you must add hot water to before serving. 
  • Fresh Fruit……..this may be sold however this is limited to whole fruit such as apples, bananas, pears. 
  • Frozen Chicken Nuggets/Mozzarella Sticks……. may be sold however they must be frozen and cooked in our concession stand.  Once this is done they must be placed into and kept warm in our food warmer.  If the group would like to include marinara sauce, it must be jar sauce and warmed in the concession stand prior to serving. 
  • Nachos and Cheese……..these may be sold however cheese must be warmed in our concession stand and temperature maintained in our food warmer. 
  • Coffee/Tea /Hot Chocolate….these may be sold however all dairy products must be kept in a bucket of ice to maintain temperature.  Non-dairy creamers, packaged sugar and Sweet-n-Low are recommended. 
  • Frozen Ice Cream and Ice Pops….. can be sold however they must remain frozen until sold. 
  • Bottled Water and Drinks…….these are permitted to be sold.
